Food Around the World Week!

This week the children have been learning about different countries and talking about food that is popular to that region. The children kicked off the week with tasting some mangos and it was oh so delicious. At my house we love to cook and try food from different cultures and why not bring the themed week home. Here are some recipes that you and your children could make and see how you much you love dishes from other countries.


Colcannon Potatoes

Ingredients

  • 1 medium head cabbage (about 2 pounds), shredded

  • 4 pounds medium potatoes (about 8), peeled and quartered

  • 2 cups whole milk

  • 1 cup chopped green onions

  • 1-1/2 teaspoons salt

  • 1/2 teaspoon pepper

  • 1/4 cup butter, melted

  • Minced fresh parsley

  • Crumbled cooked bacon

Directions

  • Place cabbage and 2 cups water in a large saucepan; bring to a boil. Reduce heat; simmer, covered, until cabbage is tender, about 10 minutes. Drain, reserving cooking liquid; keep cabbage warm in separate dish.

  • In same pan, combine potatoes and reserved cooking liquid. Add additional water to cover potatoes; bring to a boil. Reduce heat; cook, uncovered, until potatoes are tender, 15-20 minutes. Meanwhile, place milk, green onions, salt and pepper in a small saucepan; bring just to a boil and remove from heat.

  • Drain potatoes; place in a large bowl and mash. Add milk mixture; beat just until blended. Stir in cabbage. To serve, drizzle with butter; top with parsley and bacon.


English Rhubarb Crumble

Ingredients

  • 8 cups chopped fresh or frozen rhubarb

  • 1-1/4 cups sugar, divided

  • 2-1/2 cups all-purpose flour

  • 1/4 cup packed brown sugar

  • 1/4 cup quick-cooking oats

  • 1 cup cold butter

  • CUSTARD SAUCE:

  • 6 large egg yolks

  • 1/2 cup sugar

  • 2 cups heavy whipping cream

  • 1-1/4 teaspoons vanilla extract

Directions

  • In a saucepan, combine rhubarb and 3/4 cup sugar. Cover and cook over medium heat, stirring occasionally, until the rhubarb is tender, about 10 minutes.

  • Pour into a greased 13x9-in. baking dish. In a bowl, combine flour, brown sugar, oats and remaining sugar. Cut in butter until crumbly; sprinkle over rhubarb. Bake at 400° for 30 minutes.

  • Meanwhile, in a saucepan, whisk the egg yolks and sugar; stir in cream. Cook and stir over low heat until a thermometer reads 160° and mixture thickens, 15-20 minutes. Remove from the heat; stir in vanilla. Serve warm over rhubarb crumble.


Cassoulet for Today

Ingredients

  • 6 boneless skinless chicken thighs (about 1-1/2 pounds)

  • 1/4 teaspoon salt

  • 1/4 teaspoon coarsely ground pepper

  • 3 teaspoons olive oil, divided

  • 1 large onion, chopped

  • 1 garlic clove, minced

  • 1/2 cup white wine or chicken broth

  • 1 can (14-1/2 ounces) diced tomatoes, drained

  • 1 bay leaf

  • 1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed

  • 1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme

  • 2 cans (15 ounces each) cannellini beans, rinsed and drained

  • 1/4 pound smoked turkey kielbasa, chopped

  • 3 bacon strips, cooked and crumbled

  • TOPPING:

  • 1/2 cup soft whole wheat bread crumbs

  • 1/4 cup minced fresh parsley

  • 1 garlic clove, minced

Directions

  • Preheat oven to 325°. Sprinkle chicken with salt and pepper. In a broiler-safe Dutch oven, heat 2 teaspoons oil over medium heat; brown chicken on both sides. Remove from pan.

  • In same pan, saute onion in remaining oil over medium heat until crisp-tender. Add garlic; cook 1 minute. Add wine; bring to a boil, stirring to loosen browned bits from pan. Add tomatoes, herbs and chicken; return to a boil.

  • Transfer to oven; bake, covered, 30 minutes. Stir in beans and kielbasa; bake, covered, until chicken is tender, 20-25 minutes longer.

  • Remove from oven; preheat broiler. Discard bay leaf; stir in bacon. Toss bread crumbs with parsley and garlic; sprinkle over top. Place in oven so surface of cassoulet is 4-5 in. from heat; broil until crumbs are golden brown, 2-3 minutes.


Cuccidati

Ingredients

  • 2 cups raisins

  • 3/4 pound pitted dates

  • 3/4 cup sugar

  • 2 small navel oranges, peeled and quartered

  • 1/3 pound dried figs

  • 1/3 cup chopped walnuts

  • 1/4 cup water

  • DOUGH:

  • 1 cup shortening

  • 1 cup sugar

  • 2 large eggs, room temperature

  • 1/4 cup 2% milk

  • 2 teaspoons vanilla extract

  • 3-1/2 cups all-purpose flour

  • 1 teaspoon salt

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • GLAZE:

  • 2 cups confectioners' sugar

  • 2 to 3 tablespoons 2% milk

Directions

  • Place the first 7 ingredients in a food processor; cover and process until finely chopped. Set aside.

  • In a large bowl, cream shortening and sugar until light and fluffy, 5-7 minutes. Beat in the eggs, milk and vanilla. Combine the flour, salt, baking powder and baking soda; gradually add to creamed mixture and mix well. Divide dough into 4 portions; cover and refrigerate for 1 hour.

  • Roll out each portion between 2 sheets of waxed paper into a 16-in. x 6-in. rectangle. Spread 1 cup filling lengthwise down the center of each. Starting at a long side, fold dough over filling; fold the other side over the top. Pinch seams and edges to seal. Cut each rectangle diagonally into 1-in. strips. Place seam side down on parchment-lined baking sheets.

  • Bake at 400° for 10-14 minutes or until edges are golden brown. Cool for 10 minutes before removing from pans to wire racks to cool completely. Combine confectioners' sugar and enough milk to achieve desired consistency; drizzle over cookies. Store in an airtight container.


Chicken Tikka Masala

Ingredients

  • 1 can (29 ounces) tomato puree

  • 1-1/2 cups plain yogurt

  • 1/2 large onion, finely chopped

  • 2 tablespoons olive oil

  • 4-1/2 teaspoons minced fresh gingerroot

  • 4 garlic cloves, minced

  • 1 tablespoon garam masala

  • 2-1/2 teaspoons salt

  • 1-1/2 teaspoons ground cumin

  • 1 teaspoon paprika

  • 3/4 teaspoon pepper

  • 1/2 teaspoon cayenne pepper

  • 1/4 teaspoon ground cinnamon

  • 2-1/2 pounds boneless skinless chicken breasts, cut into 1-1/2-inch cubes

  • 1 jalapeno pepper, halved and seeded

  • 1 bay leaf

  • 1 tablespoon cornstarch

  • 1 cup heavy whipping cream

  • Hot cooked basmati rice

  • Chopped fresh cilantro, optional

Directions

  • In a 5-qt. slow cooker, combine the first 13 ingredients. Add chicken, jalapeno and bay leaf. Cook, covered, on low 4 hours or until chicken is tender. Remove jalapeno and bay leaf.

  • In a small bowl, mix cornstarch and cream until smooth; gradually stir into sauce. Cook, covered, on high 15-20 minutes or until sauce is thickened. Serve with rice. If desired, sprinkle with cilantro.


Aussie Sausage Rolls

Ingredients

  • 1 medium onion, finely chopped

  • 2 tablespoons minced fresh chives or 2 teaspoons dried chives

  • 2 teaspoons minced fresh basil or 1/2 teaspoon dried basil

  • 2 garlic cloves, minced

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

  • 1 teaspoon paprika, divided

  • 1-1/4 pounds bulk pork sausage

  • 1 package (17.3 ounces) frozen puff pastry, thawed

Directions

  • Preheat oven to 350°. Combine first 6 ingredients and 3/4 teaspoon paprika. Add sausage; mix lightly but thoroughly.

  • On a lightly floured surface, roll each pastry sheet into an 11x10-1/2-in. rectangle. Cut lengthwise into 3 strips. Spread 1/2 cup sausage mixture lengthwise down the center of each strip. Fold over sides, pinching edges to seal. Cut each log into 6 pieces.

  • Place on a rack in a 15x10x1-in. pan, seam side down. Sprinkle with remaining paprika. Bake until golden brown and sausage is no longer pink, 20-25 minutes.
