This week kicked off our theme of ice cream. The children have made a ice cream sensory bin, made ice cream cones out of paper plates, and practiced tracing. On Friday the kids will get to make and eat their own ice cream sundaes, what a yummy treat! Here are some fun takes on ice cream and maybe you and the kids can try some at home.
Blue Coconut Ice Cream Floats
INGREDIENTS FOR BLUE COCONUT ICE CREAM FLOATS
This recipe will make 6 floats and calls for simple ingredients.
Water
Sugar
Coconut Extract
Blue Food Coloring
Lemon-Lime Soda
Vanilla Extract
HOW TO MAKE BLUE COCONUT ICE CREAM FLOATS
A few extra steps and you can take an ordinary ice cream float and turn it into a pretty blue ocean water float. These will make kids smile! STEP ONE: MAKE SIMPLE SYRUP
Start off by combining the water and sugar in a small microwave-safe bowl. Place in the microwave and heat for 30 seconds and then stir. If the sugar is not melted then microwave for and additional 15 seconds or until the sugar melts completely.
Add the coconut extract to the bowl and stir to combine.
Set the bowl aside to cool. STEP TWO: ADD FOOD COLORING
Once the simple syrup has cooled it is time to add three drops of blue food coloring.
Stir to combine.
Now stir the blue syrup into the 24 ounces of lemon-lime soda pop. STEP THREE: MAKE FLOATS
Place two scoops of ice cream into a small cup.
Pour the blue soda pop over the top of the ice cream.
Serve immediately.
Cookie Monster Ice Cream
Ingredients
▢2 Cups Heavy Whipping Cream
▢1 14 Ounce Can Sweetened Condensed Milk
▢2 Tablespoons Vanilla Extract
▢½-1 Teaspoon Blue Food Coloring
▢20 Chocolate Sandwich Cookies I used Oreos, Roughly Chopped
▢15 Chocolate Chip Cookies I used Chips Ahoy, Roughly Chopped
Instructions
Whip heavy cream, vanilla, and food coloring together until stiff peaks form. If you're like me and don't have a mixer all you need is a VERY cold bowl/whisk and some upper arm strength!
Stir in sweetened condensed milk until well blended. Add additional food coloring to reach your desired shade of blue.
Fold in chopped cookies sprinkling extra on top if desired.
Freeze for ~6 hours.
FRIED ICE CREAM
HOW TO MAKE FRIED ICE CREAM
Place crushed frosted flakes (or corn flakes) in a shallow dish. Stir in sugar and cinnamon until evenly combined.
Scoop out a large spoonful of ice cream (about 1 cup or 1/2 pint) using a large ice cream scoop. Roll the ice cream in the cereal crumb mixture.
Place balls of ice cream on a parchment paper-lined baking sheet. Freeze for at least 8 hours for best results. **DO NOT skip freezing or reduce the freezing time, or your ice cream balls will turn into a gooey mess.**
Heat oil to 400 degrees. in a large pot of deep fryer.
Place one ice cream ball in the oil at a time for no longer than 10 seconds, until golden brown. This is a fast process to the coating gets crispy and the ice cream stays frozen under the crust. Remove ice cream from oil and transfer to a serving bowl.
Garnish with your favorite toppings and serve immediately.
Ice Cream Burger
4 soft hamburger buns, split in half
About 2 tbsp. unsalted butter, softened
2 or 3 different ice cream flavors
Heat a skillet. Spread the cut sides of the buns with the softened butter. Toast them in the skillet over medium heat for about 1 minute, until they’re light golden and crisp. Fill each bun while it’s still warm with scoops of the contrasting ice cream flavors and eat immediately.
DIY Rolled Ice Cream
Ingredients
for 4 servings
1 pt heavy cream
1 can sweetened condensed milk
1 pinch salt
topping of your choice
Preparation
Whisk the heavy cream, condensed milk, and salt in a bowl.
Pour the mixture over a half sheet pan, or multiple quarter sheet pans. Make sure the ice cream base just barely covers the bottom. It should be ¼-inch (6 mm) thick or less.
Sprinkle any chopped-up toppings you would like. With a whisk, mix the toppings into the ice cream base to ensure they’re evenly distributed.
Freeze for at least 4 hours. Make sure to also put your scrapers and ice cream bowls in the freezer so the ice cream doesn’t melt while rolling.
After the ice cream is frozen solid, remove from the freezer and quickly place the metal spatula/paint scraper at an 45° angle against the edge of the pan, pushing carefully forward. If the ice cream needs a little help forming, use a butter knife to push the sheet of cream into the roll.
Place the rolled ice cream in a chilled bowl and top with any toppings you desire.
